CONFERENCES/SEMINARS/WORKSHOPS
The SHTM's Food and Wine Academy has organised several workshops, as detailed below.
  • At the Argentina Wine Workshop on 31 May 2024, Malbec and other wines and the wineries and new wine region in Argentina were introduced by Ms Janine Smink, Export Manager, Asia and Europe, Salentein Family of Wines; Mr Luciano Costarelli, Global Export Manager, Bodega Benegas; and Mr Marcelo Marasco, Export Director, Asia Pacific & Africa, Catena Zapata.
  • At the Italian Spirits & Cocktails Workshop on 13 June 2024, Italian spirits and popular cocktails made from them were introduced by Mr Enrico Ho from the Hong Kong Bartenders Association.
  • In the Beef Across the World Workshop on 18 June 2024, the differences between beef from different countries were described by Chef Calvin Choi, Executive Sous Chef, Regent Hong Kong, who showcased the same cuts of beef from Argentina, Australia, Canada, Ireland, New Zealand, Poland, South Africa, the UK and the USA.
  • Chef Suwannee Ardhannapong, Thai Chef Consultant & Assistant Professor, Grace Culinary Arts Academy, Bangkok conducted a food demo session on Chicken Green Curry & Red Rubies Dessert at the Thai Cooking Demo on 17 July 2024.
  • Chef Jan Ruangnukulkit, Award-winning Executive Chef, Saffron, Banyan Tree Macau prepared a Thai menu-tasting at the Think Food Think Thailand event on 24 July 2024. Mr Chaturont Chaiyakam, Consul General of the Royal Thai Consulate General, Hong Kong, Chef Justin Chan, Owner & Head Chef of Juto Asian Fusion Restaurant & Bar and Mr Roger Wu, Hong Kong Travel Columnist also participated in the event.
Dean Kaye Chon, Prof Haiyan Song, Prof Sam Kim, Prof Mimi Li, Dr Neil Li, Dr Anyu Liu, Dr Richard Qiu and Dr Ibrahim Mohammed attended the FB-SHTM Joint Symposium on 4 June 2024, where they participated as described below.
  • Dean Chon delivered the opening remarks.
  • Prof Song moderated the morning session, guided the dialogue and ensured that there was a seamless exchange of ideas.
  • Prof Kim gave a presentation entitled "Impacts of Cutting-Edge Smart Technologies on Hospitality and Tourism".
  • Prof Li delivered a speech entitled "Managing Tourists' Immersive Experiences".
  • Dr Li delivered on "Utilising Multimodal Big Data Analysis for Intelligent Business Decision and Prediction".
  • Dr Liu presented a topic on "The Impact of Tourism Development on Residents' Well-Being".
  • Dr Qiu presented a topic on "Retail Tourism – Analysis of A Global Survey".
  • Dr Mohammed delivered on "Assessing the Revenue Impact of Online Upselling of Hotel Rooms Using Propensity Score-Matching Techniques".
Dr Loretta Pang presented a co-authored paper entitled "Perception of Welcoming Culture: A Study of Technology Use and Service Training to Enhance Solo Female Travellers' Experiences" at the Tourism, Hospitality & Events International Conference 2024 in Amsterdam, The Netherlands, on 5-7 June.
Dr Raymond Kwong presented a co-authored paper entitled "Developing Competencies of Global Citizenship through International Service-Learning Experiences" at the 20th Annual International Conference on Tourism in Athens, Greece, on 10-13 June 2024.
Dean Kaye Chon, Prof Haiyan Song, Dr Deniz Kucukusta and Dr Neil Li, together with Ph.D. students Ms Thivyaashani Sivasubramaniam, Ms Hongrun Wu and Ms Xinying Xu, attended the 20th Asia Pacific Forum for Graduate Students Research in Tourism in Phuket, Thailand, on 12-14 June 2024.
  • Prof Song delivered a keynote presentation entitled "Integrating Research with Practice – The Development of a Decision-Making System for the GBA".
  • Dr Deniz Kucukusta presented a co-authored paper entitled "The Communication between Hotel ESG Practices and Tourists".
  • Dr Li presented a co-authored paper entitled "The Loneliness of Chinese Solo Female Tourists in Generation Z".
  • Ms Sivasubramaniam presented a co-authored paper entitled "Self-Representation of Solo Travellers: The Narrative of Chinese Travellers".
  • Ms Wu and Prof Song presented a co-authored paper entitled "Tourist's Choices for Carbon Offsets from Both Stated and Revealed Preference Perspectives".
  • Ms Xu and Prof Song presented a co-authored paper entitled "Emerging Trends in Remote Work While Travelling: A Visualisation Analysis and Future Outlook".
Dr Catherine Cheung and Dr Ada Lo presented a co-authored paper entitled "Revolutionizing Learning: The Intersection of Education Technology, Shared Leadership and Mutual Assistance" at the 2024 Association of Southeast Asian Institutions of Higher Learning (ASAIHL) Conference in Tokyo, Japan on 16-17 June.
Dr Norman Au presented a co-authored paper entitled "Employee's Perceived Impact with Facial Recognition (FR) Technologies Usage in Vietnam Hotels – An Experimental Approach Using Self-Developed FR Software Prototype" at the 1st International Forum on Cultural Tourism – Preservation, Revitalization, and Digital Transformation in Hangzhou, China on 21-22 June 2024.
Dr Ada Fong and Dr Clare Fung attended the 14th International Conference on Education, Research and Innovation in Tokyo, Japan on 22-24 June 2024. Dr Fong presented a co-authored paper entitled "Internationalisation at Home: A Case Study of Virtual Cross-Cultural Learning Experience for Undergraduate Hospitality and Tourism Students in Hong Kong and Japan". Dr Fung presented a paper entitled "Evaluating the Effectiveness of a Case Study Method in Enhancing Marketing Learning in Hospitality Education".
Prof Haiyan Song, Prof Mimi Li, Dr Anyu Liu and Dr Crystal Shi, together with Ph.D. student Ms Danting Cai, D.HTM student Mr Xiaohai Zhan and MSc student Ms Shiyi Zhang attended at the 6th Workshop of Alliance for Research on Wine & Hospitality Management in Reims, France, on 25-28 June 2024. Prof Li presented a co-authored paper entitled "Effects of Sensory Cues on Wine Taste Perceptions and Consumer Behaviour: Evidence from a Wine Tasting Experiment". Dr Shi, Ms Cai and Mr Zhan presented a co-authored paper entitled "Tech Meets Terroir: An Affordance Theory Approach to Evaluating AR/VR's Role in Wine Tourism from an Industry Perspective". Dr Shi and Ms Zhang presented a co-authored paper entitled "Breaking the Glass Ceiling: A Multisource Perspective on Empowering Female Leadership Advancement in the Ningxia Wine Industry".
Prof Cathy Hsu made a presentation on "TOUROMETER: A Tool to Support Social Sustainability of Tourism" at the 36th Joint Meeting of the UN Tourism Commission for East Asia and the Pacific & the UN Tourism Commission for South Asia in Cebu, the Philippines on 26-28 June 2024.
Professor Sam Kim delivered a keynote entitled "Impacts of Cutting-Edge Technologies on Tourism and Hospitality" at the International Conference of Tourism (ICOT) 2024 Conference in Corfu, Greece on 26-29 June.
Prof Haiyan Song and Dr Anyu Liu attended at the 44th International Symposium on Forecasting in Dijon, France on 30 June – 3 July 2024. Prof Song presented a co-authored paper entitled "The Development of a Self-Adaptive Tourism Demand Forecasting".
Dean Kaye Chon, Dr Sabrina Huang and Dr Dori Davari attended at the Asia Pacific Tourism Association 2024 Annual Conference in Macau on 3-5 July. Dean Chon participated in the APTA Graduate Panel Session on "Navigating the Digital Horizon: The Next Phase of Post-Graduate Education and Research in Hospitality and Tourism". Dr Huang presented a co-authored paper entitled "A Case Study on the Relationship between Multiple Mentoring Functions and Self-Efficacy in the Leisure Service Industry". Dr Davari presented a co-authored paper entitled "The Spectrum of Destination Curiosity: A Latent Class Analysis Approach".
Prof Haiyan Song participated in the roundtable discussion "The Role of Art and Culture and New Media Communication in Marketing" at the World Tourism Alliance Europe-China Tourism Dialogue in Budapest, Hungary on 3-5 July 2024.
Prof Cathy Hsu delivered a presentation on "TOUROMETER: A Social Listening Tool for Policy and Business Strategies" at the Hong Kong General Chamber of Commerce on 4 July 2024.
Dr Janelle Chan presented a paper entitled "Examining the Impact of AI-Created Photos on Choices in Vegetarian Cuisine" at the 7th International Conference on Social Science and Business in Osaka, Japan, on 4-6 July 2024.
Dr Seunghun Shin presented a co-authored paper entitled "From Onstage to Onboard: The Impact of K-Pop Artist's Activity on Tourism Demand Mediated by Audience Online Engagement" at the 2nd World Conference on Smart Tourism in Seoul, Korea on 9 July 2024.
Prof Haiyan Song, Dr Richard Qiu and Dr Curley Liu attended at the 11th Advances in Hospitality and Tourism Marketing and Management Conference in Mauritius on 15-19 July 2024. Prof Song delivered a keynote on "Low-Carbon Emission Travel Behaviour". Dr Qiu and Dr Liu presented a co-authored paper entitled "Decoding the Tourist's Wallet: Budgets and Allocations in Retail Tourism".
With the support of SHTM alumni Ms Minjeong Cho, Senior Associate of the Business Development Team at Josun Hotels and Resorts and Ms Hae Jin Hwang, Data Analyst at SmartiNSights, Dr Sung In Kim represented the School and introduced its programmes at the Hong Kong & Singapore Prestigious University Admissions Briefing Seminar hosted by Sehan Academy in Seoul, Korea on 20 July 2024. The seminar attracted over 300 participants who were so inspired that many of them came visit the SHTM booth afterwards for further advice.
Professor Honggen Xiao and Dr Vincent Tung attended at the 2024 ICHRIE Global Conference in Montreal, Canada on 24 -26 July. Professor Xiao presented a co-authored paper entitled "Navigating Asian-Ness in Hospitality: Insights from Customer Perceptions in Online Reviews". Dr Tung presented a co-authored paper entitled "Exploring Discriminatory Tourist Experiences".
