Summary

ICPNFF-2025 will provide a unique opportunity for scientists and professionals to share their ideas and findings on the discovery, function, and application of polysaccharides for human health and food sustainability. It will be a medium-sized conference with 200-300 participants, featuring highly interdisciplinary topics across the fields of polymer, food, and health sciences, including the application of polysaccharides in the development of nutraceutical products and sustainable materials.

Objectives/Topic Areas:

  • Structure-property-function relationships
  • Analytical methods
  • Chemical, enzymatic and physical modifications
  • Biosynthesis and bio-production
  • Extraction and waste valorisation
  • Interactions/complexes with other molecules: proteins and polyphenols
  • Bioactivities, nutraceutical functions and the underlying mechanisms
  • Gastrointestinal digestion and microbiota metabolism
  • Biomaterials: nanotechnology, drug delivery, tissue repair, 3-d printing…
  • Future food applications: hydrocolloids, packaging, films…
