Professor of Practice

Dr Chung Wai-cheung, Stephen

Professor of Practice (Food Safety and Technology)

Research Overview

Stephen Chung’s work was focused on the R&D activities and monitoring of organic environmental contaminants (dioxins, PCBs, PAHs), natural toxins (mycotoxins, mushroom toxins), processing contaminants, pesticide residues, etc., in food samples. Besides, he also actively involved in exposure estimation to food contaminants which is an important part of risk assessments.
